Carolyn’s Banana Chocolate Chip Protein Cookies

These tasty treats are a great snack on the run. One cookie is all it takes to keep you feeling full.

Ingredients:

6 egg whites

1 ¾ c oatmeal

2 tbsp honey

1 tsp vanilla

2 c banana Myofusion protein powder

½ c unsweetened applesauce

1 tsp oil

½ c dark chocolate chips

1 tsp baking powder

Cocunut flour to add texture (or another gluten-free flour of choice)

Dash of cinnamon

Unsalted almonds (optional)

Preheat oven to 350. Mix all ingredients (except almonds) in a bowl, adding chocolate chips last. Careful not to overmix! Drop on cookie sheet lined with silicone sheet or parchment paper. Place 2-3 almonds on top of each cookie (optional). Bake approximately for 12-15  min.

Makes approx. 10-12 cookies. To keep cookies fresh, wrap individually and freeze as they contain no preservatives.

    I have the ingredients to make these cookies (Banana Chocolate chip Protein ) I was wondering what do I do with the Coconut flour. Do I add a cup or what? The recipes just states to add the coconut flour but no amount, Could you please advise me .Thank-you

      Hi Helen,

      Really the amount of flour depends on the texture of the mixture…i usually add around 1/2c but every time is a little different. If your mixture is really moist you can add more.
