Guiltless Chocolate Chip Cookies

Author: Carolyn Original Content: Guiltless Chocolate Chip Cookies

*Modified from a recipe in Oxygen magazine (September 2010)

These satisfying cookies contain ingredients that fight cravings and won’t leave you feeling deprived. Cinnamon keeps your blood sugar stabilized while protein from cottage cheese and whey protein powder will keep your appetite in check.

Ready in 45 minutes; Makes approx. 30-38 cookies

Ingredients:

1 ½ c whole-wheat flour (or blend ww flour with oat flour)

2 cups whey protein powder (vanilla works well or add chocolate protein if you’d like a double chocolate taste)

1 tsp. baking powder

2 tsp. cinnamon

1 ½ c low fat cottage cheese (PC Blue Menu 1% recommended)

½ c honey

¼ c canola oil

1 egg

2 tsp. vanilla extract

1 c rolled oats

½ c semi-sweet chocolate chips

Directions:

  • Preheat oven to 350
  • Combine first 4 ingredients in a bowl and blend with a fork
  • In a separate bowl, combine the wet ingredients (cottage cheese, honey, oil, egg & vanilla) and whisk together.
  • Add wet ingredients to the dry and mix with a fork. Mix in oats and chocolate chips.
  • Drop teaspoon size portions onto a parchment-lined baking sheet. Bake 12 minutes or until cookies are slightly brown.

Looks awesome! Will I find whey protein powder at a grocery store or a specialty store?

Best of luck in your training for Nationals. We’re rooting for you!

Hi Patty. Thanks for the best wishes on nationals. You can buy whey protein at Costco or a grocery store but your best bet (and best tasting) is to pop in to a specialty store like GNC or Popeye’s supplements and pick up a better quality brand. I always cook with Myofusion or Iso Sensation. Hope that helps!
